Here are some things that I like to eat during the summer, a season that brings with it a vibrant array of flavors and textures. As the temperatures rise and the sun shines brightly, I find myself gravitating towards a variety of foods that not only tantalize my taste buds but also help keep me feeling refreshed and satisfied. Some of these options lean towards the healthier side of the spectrum, while others are indulgent treats that I allow myself to enjoy during these warm months. Regardless of their nutritional value, each item on my list contributes to the overall joy of summer dining.

1) Watermelon salad.

This salad, despite having just three ingredients, serves as a filling and refreshing light meal, perfect for the hot summer months. Although the combination might initially seem unusual—I'll admit it did for me too before I tried it—if you're a fan of watermelon, this dish is ideal for you. The sweet watermelon pairs wonderfully with the salty feta cheese, and the quinoa adds substance, making this dish excellent for keeping you hydrated and satisfied.

2) Cowboy Caviar.

This is another great fleshing salad full of fibre and is super filling. There are many different recipe for this salad but no matter which one you try they are all refreshing and full of veggies. This dish is also great if you like to be creative as long as you have your base ingredients you can add pretty much and veggie you like. It technically wouldn’t be cowboy caviar anymore but if you want extra protein you can add any other ingredients you like.

4) Pulled pork sandwiches

These sandwiches are perfect if you're looking for something satisfying. I enjoy this meal because it can be made even more hearty by serving it in a bread roll with chips on the side, or by pairing it with a salad in a lettuce wrap.

BBQ pulled pork

Lettuce

Tomato

Cucumber

Grated cheese

5) Rice and mince stuffed peppers

I really enjoy this meal; it's another dish that's light and perfect for both dinner and lunch. It can be enjoyed hot or cold, and no matter how you choose to eat it, it tastes fantastic.
